One of my favorites is back.....

The featured recipe is:

Curried Butternut Squash Soup
Makes 4 to 6 servings

1/2 cup butter
2 shallots, minced
4 cups chopped butternut squash
2 cups heavy whipping cream
2 cups chicken broth
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup coconut milk
Garnish: sour cream

1. In a medium saucepan, melt butter over medium-high heat. Add shallots and squash; cook, stirring frequently, 8 to 10 minutes or until squash is tender.

2. Reduce heat to medium. Stir in cream, broth, curry, salt, and pepper; bring to a simmer, and cook 10 minutes, or until soup is slightly thickened.

3. Transfer mixture to a blender and process, in batches, until smooth. (Caution: mixture is hot.) Return mixture to saucepan. Stir in coconut milk; cook over low heat until thoroughly heated. Garnish with sour cream, if desired.

April in Texas


Well, we had snow for Easter in parts of Texas. My grands in Belton made a snowman on Easter sunday.


I'm thinking about what to do with my yard this spring and summer - have let it get away from me. It looks like a wild pasture right now. This is what I'd like it to look like. This picture is from the Home and Gardens website. This would take a lot of work and $$$, but I may do it. More power to me!

Texas Independence Day

No longer openly celebrated in Texas (not politically correct for some reason), March 2nd is Texas Independence Day. This day celebrates our war-worn freedom from Mexico in 1836, which marked the beginning of Texas' nine-year stint as a sovereign nation before it became part of the United States of America.

Wow, I wonder what happened?!! Sir, can you answer that question?

Getting older and loss

We know to expect and go through the loss of our parents.....but dealing with the process of a severe illness with a younger sibling is more difficult for me. One of my younger brothers has been ill for a number of months, and now has been placed in hospice care.....too soon!

Well, I do wear red on Fridays.
Remember those emails asking us to wear red to honor our USA troops overseas? and those asking us to wear red for the Astros? and the ones to promote heart health for women? Well, I support all of those causes, along with many others, but, you know, I don't see anyone else minding those emails and wearing red on Fridays.....am I just gullible? You betcha!

Birthday!

Today is my 62nd Birthday.....I can retire today (but won't). I enjoy the $$ I am making. Those trips to Vegas would have to stop - and I love ka-ching, ka-ching!!

I am so excited! Kate and Sherman called me from Geneva, Switzerland, just to wish me a Happy Birthday! What a wonderful surprise. And so great to hear their voices.

Makes getting older much better to have friends like that.
